Beautiful Berries

 

Celebrating summer with an afternoon  tea? Why not try our enriching Fruit Burst or Tutti Frutti, the latter being a little subtler in flavour.  A theme is always fun to have and so The Kettle Shed bring to you recipes inspired by these blends. For the sweet toothed amongst us, our light and fruity ice teas are complemented nicely by yummy raspberry pavlovas.

Ingredients for a berry iced tea which serves one: 1 x Kettle Shed Fruit Burst Tea bag, 1 x tsp of caster sugar, 2 x tsp of honey, blueberries, raspberries, a handful of ice, a strawberry and a sprig of mint.

Instructions: Place the teabag in a mug and pour boiling water over it until full. Allow to brew until steeped and cold. Add blueberries and raspberries to the bottom of a glass. Sprinkle caster sugar over this and spoon one teaspoon of honey ready to mix. Using the end of a rolling pin crush these down. Pour the chilled tea over this and add ice. Sprinkle more blueberries and raspberries on top, add the other teaspoon of honey ready to mix. A sprig of mint and a strawberry makes for a nice decoration.

Alternatively, instead of using blueberries and raspberries, replace with chopped strawberries. Add a cinnamon stick and slice of orange rather than mint!

Ingredients for raspberry pavlovas: 2 x egg whites, 125g caster sugar, 1 teaspoon cornflour, 1/2 teaspoon white wine vinegar, double cream, 225g raspberries, 2 x baking sheets lined with grease-proof paper.

InstructionsPut the egg white in a clean bowl and whisk to form stiff peaks. Sprinkle over a couple of teaspoons of the caster sugar and fold into the mixture. Continue folding in the remaining sugar slowly in the same way, adding the cornflour and vinegar with the last spoonful’s.

Drop heaped tablespoonfuls of the mixture onto the prepared baking sheets, spacing them slightly apart, swirling the mixture upward into a peak.  Bake in a pre-heated oven at 140 C (275 f) gas mark one for about 45 minutes until dry and just beginning to colour. Using a spatula, carefully remove the meringues from the baking sheets and transfer to a wire rack to cool completely. Add a desert spoon of whipped double cream to each and place a raspberry on top!
